Essenza's long time bartender, Bert, claims to have invented the Bushwacker in the 1970s at a nearby St. Thomas resort. The now-famous Caribbean cocktail includes dark rum, Kahlua, creme de cacao, cream of coconut, milk and ice. A treat not to be missed! 

Our most "Instagrammable" location is from the balcony off the Palazzo Building. Grab a photo and make your friends wish they were right there with you! 

Iguanas are our favorite reptile guests. If you're up for it, join our naturalists as they feed the iguanas each day at 12:30pm.

Design:
The traditional Caribbean Grand Palazzo Building is an ideal spot to welcome guests with a distinctive Caribbean feel, complemented by island staples such as steel pan music and rum punch. Perfect for pictures! Guest room decor is inspired by the ocean and surrounding islands, and luxuriously appointed in true Ritz-Carlton style. All guest rooms have balconies for enjoying a morning cup of coffee or evening cocktail while overlooking the lush mangroves, Great Bay and neighboring St. John.

Standout venue features:
Learn a new sport with complimentary access to unlimited watersports for exploring the turquoise waters of Great Bay, including stand up paddle boards, kayaks, windsurfers and Hobie Cats. Snorkel gear is great for checking out the sealife in the Bay's protected reefs. And don't miss the night snorkel, led by our trained naturalists from Jean-Michel Cousteau's Ambassadors of the Environment. A truly unforgettable experience!

Take in neighboring islands and secret snorkeling destinations on our own luxury catamaran. Sip on cocktails during a sunset sail, or visit the bluest Caribbean water on the British Virgin Island of Jost Van Dyke and enjoy a pain killer at the famous "Soggy Dollar Bar" for a distinctly Caribbean beach experience.

Savor the freshest local seafood, including Caribbean lobster, snapper, grouper and wahoo. The fresh fish arrives straight to the beach on Tuesdays and Saturdays at 4pm--a perfect photo opp!

Bleuwater: Signature restaurant featuring fresh local seafood, prime meats and a robust wine list. The restaurant has terrace and patio seating, overlooking the waters of Great Bay and neighboring St. John.

EssenzaThe essence of Italy's best with handcrafted, authentic and exquisitely prepared Italian dishes. Whether it features locally sourced seafood or prosciutto from Parma, cuisine is crafted and served to feel like home. Guests can enjoy inside or outside on a terrace overlooking Great Bay.

Coconut Cove: beach and poolside venue serving authentic Caribbean cuisine made with fresh, local ingredients. The expansive bar specializes in a full range of tropical specialties

Sails: an oceanfront grill featuring the flavors of the Caribbean in a relaxing haven, including fresh salads, sandwiches and fish. "Sea to Sails" every Tuesday and Saturday evening, features the freshest fish and lobster, along with a live band for the ultimate Caribbean dinner experience.

Zest: offers a full menu of coffee drinks using coffee from Virgin Islands Coffee Roasters, as well as smoothies and frozen yogurt complete with an assortment of delectable toppings. Adults enjoy a selection of adults-only milkshakes and smoothies: the perfect complement to a day spent at the beach.
Cocktails are available at all of our restaurants, though nothing says vacation like the tropical 'Drink of the Day,' enjoyed in Sails with views of the sparkling Caribbean Sea. The bar in Essenza offers a large selection of Italian wines, as well as unique cocktails inspired by Italian ingredients. Our favorite is "Made in Tuscany," which includes fresh strawberry, mint, balsamic vinegar from Modena and a dash of fresh ground pepper.

Located adjacent to our Great Bay Ballroom, the Great Bay Terrace offers a picturesque setting for cocktail hour. Plated dinners are also delightful in this open-air location.
