In the beginning there has been one word in Carlos’ Bistro, Beautiful. The excellence and the experience of the best in Colorado Springs. Carlos (Owner, Executive Chef, and Matradee) provides a warm and welcoming experience to all of our customers, making everyone feel special at home and relaxed. We are proud to now offer Japanese kobe and wagyu steaks plus burgers and kobe sausages made with kobe, wagyu, and prime meats at Carlos' Bistro as the state of Colorado is now a member of the Japanese Kobe Club.
