Spice is a Moroccan-style lounge and restaurant overlooking the beauty of Maundays Bay. This nightclub setting is designed for sharing meals and hand-crafted cocktails with family and friends. It features a Mediterranean Moroccan fusion menu with Starters and Small Bites such as Conch Ceviche, Beef or Lamb Kebab Shish Taouk and Grilled Snapper. Starring tagines and cous cous choices on the menu are: Fish Tagine of the Day,Chicken Tagine and Cous Cous Bisamak made with steamed semolina, seafood and fresh cooked vegetables. Desserts like Red Pepper Ice Cream Profiterole and Pineapple Ravioli also stay true to Spice’s exotic cuisine.
Blue, with its breathtaking panoramic views of St. Maarten and the Caribbean Sea, has been recently refurbished with a bright white and pale azure backdrop accented with bright sorbet-colored chairs. This casual breakfast and lunch open-air beachfront eatery offers guests light island fare including Barkley’s Salad with grilled shrimp, greens, citrus and avocado; Island Crab Cake with spicy tartar sauce; West Indian Curry Wrap; Jerk Chicken Pizza; Mahi Mahi Wrap and Char-Grilled Black Angus Hamburger with accompaniments. - Bars & Lounges:
- Maundays Club – This beautiful lounge has been updated with distinctive rattan furniture, dark woods and dramatic lighting. Open throughout the day, Maundays is where guests come to relish the views and sip coffee, refreshing non-alcoholic drinks and cocktails. It features barista pros that create perfectly brewed coffees and fine teas, as well as freshly squeezed juices and smoothies to order.
